Commercial Catering Manager Manager

We are currently recruiting for a Catering Manager with a commercial background to manage catering services for the older person in a Nursing Home environment.

The successful candidate for this post must have a commercial background with experience in financial and budgetary management, menu design and implementation, working nutrition and specific diets (diabetic, cardiac etc) and relevant experience of managing the delivery of service for fine dining.

Excellent knowledge of budgets and financial management is crucial for this post.

Main duties and responsibilities to include:

  • Day to day management of the catering department
  • Recruitment, training, supervision and motivating of staff
  • Organizing staff rosters
  • Responsible for managing staff within area of responsibility in line with the appropriate policies in relation to issues including conduct, performance, absence, grievance, fair treatment, pay, leave and all other policies and procedures
  • Management of Health and Safety regulations on site and strictly adhering to same
  • Possess an excellent knowledge and understanding of HACCP regulations and the management of food safety. The successful candidate should have knowledge of implementing a HACCP system
  • Conducting Food Safety related audits
  • Planning menus in consultation with the Chef and ordering supplies as required
  • Costing of food items
  • Negotiating with suppliers to keep the costs down
  • Knowledge of HIQA standards
  • Experience dealing with the EHO
  • Thorough knowledge of dietetics and nutritional requirements as per dietary needs of residents
  • In conjunction with the chef, continually review menus for patients to ensure innovation is incorporated
  • Liaise closely with 3rd party contractors used on site to ensure that a quality and value for money service is provided, ensuring that suppliers comply with all Company requirements
  • Review and develop the executive dining service on offer to the residents keeping in mind cost control, portion control and waste management

The ideal candidate will possess:

  • Minimum of 3-5 years commercial catering management experience
  • Financial and Budgetary knowledge as it pertains to catering service provision
  • Experience in the management of fine dining
  • Third level degree in catering / hospitality management
  • Certification in the Management of Food Safety
  • Excellent communication and interpersonal skills
  • Health Sector experience
  • Ability to work on own initiative
  • Excellent knowledge of diets and nutrition

Job Types: Full-time, Permanent

Salary: €60,000.00 to €70,000.00 /year
