About the Restaurant
Okura Japanese Cuisine is a modern Japanese-fusion restaurant, specialises in sushi and hot dishes adapted for Western taste profiles while maintaining Japanese techniques. We are hiring a full-time Sushi Chef.
Responsibilities
- Prepare and present a wide variety of sushi to the restaurant’s standards
- Maintain HACCP logs; manage prep, portioning and stock levels
- Communicate clearly with kitchen and front-of-house teams in a fast-paced service
- Liaise with English- and Mandarin-speaking suppliers and colleagues
Requirements
- Minimum 2 years of full-time chef experience in a fast-paced kitchen setting
- Previous sushi making experience is required
- Strong knife technique and confident fish filleting
- Conversational English (basic Mandarin desirable)
- Strong organisational skills and the ability to work under pressure
- HACCP Level 2 certification is required
- Willingness to work evenings and on holidays
Staff meals during working hours
20 paid holiday days per year + public holidays
