SPECIFIC ACCOUNTABILITY
Cooking Duties
- Responsible for the preparation, cooking and punctual service (including plating and garnishing) of meals.
- Menu planning and development including the setting up of standard recipes and food specifications including special diets, healthy options, vegetarian etc.
- Provide a variety of meals to a consistently high standard for patients, staff restaurants, special functions etc.
- Monitoring portion control and ensuring the adequacy of meals provided including dealing with the related complaints
- Ensuring the economic use of all foodstuffs and energy
- Service at staff counters and any special functions
- Co-operation with new menus, methods and techniques e.g. cook chill, vending service, self-service etc.
Quality Control/Stock Control
- Check quality and quantity of perishable and non-perishable foods being used.
- Control usage of leftover foods and ensure proper use of foods and other materials.
- Ensure proper use, care and cleaning of all equipment, reporting any faults or defects
- Practice economy in the kitchen to minimise the incidence of over production, excessive use of energy and food spoilage due to poor stock rotation.
- Receiving and checking of all stocks for quality and quantity as required, following up on discrepancies and keeping associated records.
- Checking of refrigerators and stores to ensure proper rotation of foodstuffs and that food is stored in accordance with hygiene regulations.
- Taking and recording of temperatures of foodstuffs, fridges and freezer in line with the Food Hygiene Regulations and in accordance with the HACCP system.
- Any other duties that maybe required from time to time to meet the service requirements.

· National Standards for the Prevention and Control of Healthcare Associated Infections
· HSE Standards and Recommended Practices for Healthcare Records Management
· Safety audits and other audits specified by the HSE or other regulatory authorities
