Chef Senior, General Hospital
Title of Post: Chef, Senior, Mallow General Hospital Purpost of Post: Preparation and production of meals for the Hospital and other services as outlined above at the required time in accordance with the Hospital and statutory standards. Tosupervise the team in The Main Kitchen including Grade 1 & Grade 2 Chefs, Catering Assistants and other relevant staff in the performance of their duties and in line with policy and statutory standards. Key Working Relationships The Catering Team work as part of a multi-disciplinary team. The Senior Chef will be expected to have working relationship with the entire Catering Team, Nursing, Care Assistants, Dieticians, Speech & Language Therapists and other members of the Clinical and Non Clinical Teams in Mallow General Hospital. Reporting Relationships This Post Reports to the Catering & Household Manager and Director of Nursing. This Post is reported into by All Chefs Grade 1 and 2 and Catering Assistants assigned to the main kitchen area. Chef, General Hospital
Title of Post: Chef Grade II, Mallow General Hospital Purpose of Post: The purpose of the post is to provide a high standard of cook fresh meals to our patients, service users, staff and visitors. Ensuring their needs are met at all times within the remit of the post, at the required times and in accordance with policy and statutory standards. We also operate a very high quality HACCP standard which must be maintained by all staff at all times. Flexibility is required at all times in order to maintain the service we provide. Key Working Relationships: The Chef Grade 2 will be part of a multidisciplinary team involved in the food service of all the patients and staff on site this includes, Catering personnel, Nursing, Dieticians, SLT and Care Assistants Details of Service: Mallow General Hospital (MGH) is a Model 2 Hospital and is part of the Cork University Hospital Group within the HSE South West Mallow General Hospital provides inpatient, outpatient and Day patient services. The services provided in the hospital include – general medicine, cardiology, respiratory, gerontology, endocrinology, gastroenterology, ENT and urology. In patient medical activity is supported by a Medical Assessment Unit and a High Dependency Unit. MGH also provides elective Day surgery, Endoscopy, Injuries Unit, Outpatients Department, Physiotherapy and Radiology including CT scanning services and ultra sound scan. Currently MGH Catering Department caters for 71 patients and staff and visitors in a 48 seat Canteen with plans for expansion. The Catering Department strives to meet the requirements set out in the National Food, Nutrition and Hydration Policy for Adult Patients 2018. All meals are produced and cooked fresh in the main kitchen and transported to wards and the canteen in food trolleys. MGH delivers on all of our patients’ dietary needs which includes tailoring menus to meet specific therapeutic, ethnic and special dietary requirements. A variety of special diets and modified consistency diets are requested daily by wards for patients and a dedicated team of chefs and catering assistants cater for these diets. The Catering Department liaises closely with Nursing, Dietetics and Speech & Language Therapists as well as other support services to ensure all patients nutritional needs and preferences are satisfied.
